Lobster Salad With Jazz Apple

Serves 4
Ingredients:
2 lobsters (650 g each)
4 jazz apples
Apple cider vinegar
Apple syrup
Dill
Fresh mayonnaise
Sunflower oil
Preparation:
1. Boil the lobster for 7 minutes in a court bouillon (a broth of water, salt, lemon juice, thyme and bay leaf). Leave to cool for a few minutes and then remove from the broth. 2. In the meantime, prepare the lobster dressing. Finely slice two apples, adding a dash of cider vinegar, some apple syrup and salt and pepper.
3. Work in some mayonnaise and use the mixer to work to the desired consistency with sunflower oil. Peel, quarter and thinly slice the remaining apples.
4. To serve cut the lobster meat into slices and dress alternate slices with the apple on a plate. Finish with dressing, lobster pinchers and a little dill.
