TAKE 5 JAZZ STIR FRY
A stir-fry rustled up from readily available ingredients including 5 veg and the versatile Jazz apple, that takes just 5 minutes to prep and 5 minutes to cook! Fab for a quick warming supper for 2.
Serves 2
A good 30g (1oz) butter
Thumb-sized piece of fresh root ginger, peeled and cut into slivers or grated
1 medium parsnip, peeled, cut into fine strips
1 celery stick, cut into fine strips
6 spring onions, trimmed and sliced
2 handfuls (about 60g/2oz) frozen thawed soya beans
1 Jazz apple, cut into quarters, cored and cut into thinner wedges
About an eighth of a small winter cabbage or a head of spring greens, shredded
Salt and freshly ground black pepper
1 tbsp toasted pine-nuts
Ready prepared basmati and wild rice, for serving
1 Heat the butter in a wok or large frying pan, with the ginger, parsnip and celery strips and fry over a medium heat for 3 minutes, stirring occasionally.
2 Add the spring onions, beans, apple wedges and shredded cabbage and stir fry another couple of minutes or until the parsnip is just tender. Sprinkle with pine-nuts for serving.
To make it more Chinese-flavoured, add a few dashes of sherry and soy sauce, if you like.
